Learning objectives
Il corso ha l'obiettivo di offrire una panoramica della storia della differenziazione delle razze delle principali specie di interesse zootecnico, insieme alle principali caratteristiche che distinguono i prodotti animali e ai metodi di analisi dei dati genetici che possono essere utili per la loro caratterizzazione e valorizzazione.
Intende sviluppare la capacità di comprensione della problematica della diversità biologica delle razze animali e dei loro prodotti. Intende inoltre offrire agli studenti strumenti di comprensione applicata alla valutazione del livello di diversità fra razze, alla molteplicità di soluzioni possibili per la valorizzazione dei territori, delle razze e dei loro prodotti. Il corso intende infine favorire, durante le attività previste nelle esercitazioni, lo sviluppo di autonomia di giudizio e di abilità comunicative relative alle conservazione e valorizzazione delle razze e dei loro prodotti.

Course syllabus
Aim: The course will provide an overview of the history of the breeds formation for the main domestic species. Moreover the course will provide a concise description of characteristics of animal products and the methods of analysis of genetic data useful for their characterization and exploitation.
1. Theoretical classes
· Introduction: History and diffusion of animal genetic resources from classical and molecular information. Cosmopolitan and indigenous breeds (4 h)
· Tools for the characterization of breeds. Data analysis tools for characterization of species, breeds and individuals. Basic concepts for genetic characterization of animals: identification and monitoring of breeds, visible gene profiles, divergent phenotypes and their genetic determinism (4 h)
· Molecular characterization of breeds and products. Molecular characterization of breeds and products of animal origin. Similarity and divergence of species and breeds of interest in animal husbandry: genetic distances (4 hrs)
· Traceability of products. Traceability: identification of species, breed and single animal: methods and advantages (4 h)
2. Practical classes
· Computer classroom: Consultation of specific database: Consultation of national and European databases on products. Web site consultation of 'breeders' associations (4 hrs)
· Calculation of genetic parameters for molecular traceability: Calculation of genotypic and genetic frequencies at SNP molecular markers. Calculation of genetic distances (4 hrs)
· Case studies on breeds and products of animal origin: Search for information on products of animal origin and their breed origin with in silico or in-vivo surveys to structures of distribution of animal products (4 h)
· Case studies (computer classroom): analysis of an Italian region or European country and its peculiarities in relation to breeds and animal products, animal breeding environment, processing methods and product quality ( 4h)
